Spinach is also overflowing with health benefits. It has the highest amount of folate found in any food, which decreases the chance of birth defects, preterm labour and pre-eclampsia, and it also has lots of other vitamins and minerals.

This smoked salmon omelette is a great brunch recipe that is full of goodness – and not a runny egg in sight. 

Eggs are one of those super foods you are encouraged to fill up on during pregnancy. There is one big drawback (at least for me!): you can’t eat them runny. I find nothing tastier than eggs benedict with smoked salmon – always a winner. Not to be overly dramatic, but brunch – one of my favourite meals of the week – was ruined for me. Then I discovered this delicious smoked salmon omelette alternative and couldn’t get enough.
