The great thing about this recipe is that you can get the kids involved with the mixing and cooking and step back while they have fun in the kitchen. This fabulous recipe also caters to everyone in the family – even the fussiest of them. Some may like lemon and sugar on top of their pancakes, perhaps they prefer the traditional maple syrup, or maybe they want to try a dash of honey or Nutella (mmm, chocolate). Everyone can choose their own toppings and go nuts. It is also a great opportunity to throw a little fruit into the mix – what’s better than some chopped up strawberries on top of a nice and fluffy pancake!

My best friend is the queen of pumpkin scones. Whenever she asks if she can bring anything to an event, I always make sure to ask for the scones. She brought some over when I first had Cassie and I fell in love with them. They were just as delicious as normal scones – but even better. There is something extra tasty about them, and with a little jam and cream, they go down a treat. Cassie especially enjoys digging in and making a crumbly mess with the scones. I give them to her with no cream or jam, but she loves them just as much and will always come back for seconds (and thirds if given the choice).
