This was one of my favourite dishes growing up. My mum always cooked the traditional beef version to perfection, and teased us all as the smell wafted throughout the house. It was the first dish I learned to cook when it came to the inevitable day that I moved out and had to start fending for myself. I stayed with my brother and sister-in-law for a period, and she taught me this great additional ingredient: butternut pumpkin. I can’t get enough of it.
